Let’s start with the first one – Roast Lamb with Pears. This is a perfect dish to serve for a family dinner or to impress your friends at a dinner party. To make it, you’ll need:

Roast Lamb with Pears

Ingredients:

  • 1kg Lamb Leg, bone in
  • 2 Cloves garlic, crushed
  • 1 Tsp dried rosemary
  • 1 Tsp dried oregano
  • 1 Tsp olive oil
  • 3 Pears
  • 1/4 Cup chicken stock
  • 1 Tbsp balsamic vinegar

Instructions:

  1. Preheat the oven to 180°C.
  2. In a small bowl, mix together the garlic, rosemary, oregano, and olive oil.
  3. Rub the mixture all over the lamb leg.
  4. Place the lamb leg in a roasting pan and bake in the oven for 40 minutes.
  5. Cut the pears into quarters and add them to the roasting pan with the lamb leg.
  6. Mix together the chicken stock and balsamic vinegar and pour over the lamb leg and pears.
  7. Return the pan to the oven and bake for a further 30 minutes, basting the lamb leg and pears with the juices every 10 minutes.
  8. Remove from the oven and let the lamb rest for 10 minutes before serving.

This lamb is so tender, juicy and flavorful, while the pears add a surprising touch of sweetness. Plus, it’s a perfect way to incorporate healthy meat into your diet without sacrificing flavor.

  • 1/4 cup plain Greek yogurt
  • 1 tsp honey
  • 1 tsp chia seeds
  • 1 tsp shredded coconut

Instructions:

  1. Add the frozen mixed berries, banana, almond milk, and Greek yogurt to a blender and blend until smooth.
  2. Pour the smoothie into a bowl and top with honey, chia seeds, and shredded coconut.
  3. Enjoy your delicious and nutritious smoothie bowl!

This smoothie bowl is not only delicious but also packed with nutrients from the berries, yogurt, and chia seeds. It’s a perfect way to start your day feeling energized and satisfied.
