Quick and Easy Dinners

Check out this delicious recipe for a quick and easy chicken dish:

Chicken dish

Ingredients:

  • 4 chicken thighs, skin on and bone in
  • 4 fresh thyme sprigs
  • 2 lemons
  • 75g honey
  • 200g green beans

Instructions:

  1. Preheat the oven to 220°C (200°C fan).
  2. Place the chicken thighs skin-side up in a roasting tin.
  3. Squeeze over the juice of 1 1/2 lemons and drizzle over the honey.
  4. Strip the leaves off the thyme sprigs and scatter them over the chicken and around the tin.
  5. Season the chicken with a good pinch of salt and pepper.
  6. Cut the remaining half a lemon into wedges and tuck them in with the chicken.
  7. Roast for 25 minutes, or until the chicken is cooked through and the skin is caramelised and crispy.
  8. Meanwhile, top and tail the beans and steam for 5 minutes.
  9. Squeeze over the juice of the remaining half lemon.
  10. Once the chicken is cooked, serve with the green beans on the side.

Pesto pasta

Reinventing Ingredients

This pesto pasta dish is simple but oh-so-satisfying. Here’s how to make it:

Ingredients:

  • 400g dried fusilli pasta
  • 4 tbsp pesto
  • 4 tbsp natural yoghurt
  • 100g frozen peas
  • 1 lemon, zested and juiced

Instructions:

  1. Cook the pasta in a large pan of boiling salted water according to the instructions on the packet.
  2. Reserve a cupful of the pasta cooking water, then drain in a colander and return to the pan.
  3. Stir through the pesto, yoghurt and peas, adding a splash of the reserved pasta cooking water to loosen, if needed.
  4. Sprinkle over the lemon zest and squeeze over the juice, then toss together.
  5. Divide between your plates and serve with a few lemon wedges on the side, if you like.
